Buffalo Cheeseburger on a Portobello Bun

This Buffalo Cheeseburger on a Portobello Bun recipe is quick, healthy and delicious and can be prepared in a hurry so you can keep that lean body fueled with protein and keep your muscle mass as well as keep your metabolism stoked to burn more fat. Enjoy!

Ingredients

  • 4 oz. ground buffalo meat
  • 2 portabella mushrooms caps, stems removed
  • 1 slice fat-free cheese
  • 1 slice large tomato
  • 1 slice large tomato
  • 1/2 tsp. Dijon mustard

Directions

  1. Shape ground meat into burger patty.
  2. Grill burger and mushroom caps until desired doneness.
  3. Place mushroom cap on plate, add mustard, burger, cheese, tomato and pickle and other mushroom cap on top and enjoy!

Sea scallops tumble with a medley of fresh veggies and your favorite low-calorie Asian dressing to create this winning meal!

Ingredients

  • 6 oz. fresh scallops
  • 1 bunch asparagus, cut into 2 inch pieces
  • 1 cup mushrooms, whole
  • 1 cup matchstick carrots (pre-packaged variety)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2–3 tbsp. oriental, fat-free, calorie-free dressing
  • 1 medium tomato, sliced
  • Non-stick cooking spray

Directions

  1. Coat a medium skillet with non-stick cooking spray.
  2. Add asparagus, mushrooms, carrots and tomatoes.
  3. Sauté for 3–5 minutes.
  4. Add scallops and oriental dressing.
  5. Cook for 5–8 minutes, or until scallops are firm and no longer translucent.

BBQ Chicken Bake-Quick and easy baked casserole of BBQ chicken breast (or turkey), sweet peppers and mushrooms.

Ingredients

  • 6 oz. ground turkey or chicken
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup mushrooms, chopped
  • 2 tbsp calorie-free, fat-free honey BBQ sauce
  • Garlic powder, to taste
  • Pinch of salt

Directions

  1. Preheat oven to 350°.
  2. Combine ingredients and bake in casserole dish for at least 25 minutes until cooked.

BBQ Chicken

Marinated, BBQ chicken breast served over a medley of sauteed fresh sweet peppers, onions and mushrooms.

Ingredients

  • 6 oz. chicken breast, cut into pieces
  • 1/4 cup fat-free, calorie-free BBQ sauce
  • 1/2 cup green bell peppers, sliced
  • 1/2 cup onion, sliced
  • 1/2 cup red bell peppers, sliced
  • 1/2 cup mushrooms, sliced
  • Cooking spray

Directions

  1. Place chicken and the BBQ sauce in a plastic food storage bag.
  2. Seal and turn to coat.
  3. Marinate for 30 minutes.
  4. Coat a medium skillet with cooking spray.
  5. Over medium heat, cook chicken thoroughly.
  6. In separate pan, also coated with cooking spray, sauté the vegetables until done.
  7. Serve chicken over vegetables.
